What Maleic Acid Is

Maleic acid, or cis butenedioic acid, is an unsaturated dicarboxylic acid and the cis isomer of fumaric acid. It is a white crystalline powder with a slight odor that dissolves readily in water and alcohol. It is obtained by hydrolyzing maleic anhydride, and the cis structure gives it much higher water solubility than fumaric acid. It works as an acidulant and a reactive building block for esters and polymers, with assay on the COA.
