Ethyl Vanillin CAS 121-32-4

Ethyl Vanillin (CAS 121-32-4) is a white to pale yellow crystalline powder with a rich, sweet vanilla and cream aroma, made synthetically rather than extracted from the bean. It carries an ethoxy group where vanillin has a methoxy one, and its aroma runs several times stronger, so a smaller dose gives the same vanilla note. UATChem supplies food grade ethyl vanillin for confectionery, chocolate, bakery, beverages and dairy, for tobacco and feed flavors, personal care fragrances and pharmaceutical taste masking. It dissolves in alcohol, propylene glycol and glycerol, is only slightly soluble in water and is light sensitive. Packs run from small food grade bags to 25 kg fiber drums; send the grade, quantity and destination for a quote with COA and SDS.

What Ethyl Vanillin Is

Ethyl vanillin is a synthetic aromatic aldehyde, sold as white to pale yellow needle or scale crystals with a full, sweet vanilla and cream character. It is not found in nature and is not the same molecule as vanillin: an ethoxy group replaces vanillin’s methoxy group, and the resulting note is three to four times stronger, so less is needed to reach the same flavor level. It dissolves easily in alcohol, propylene glycol, glycerol and oils, dissolves only slightly in cold water and darkens under strong light. UATChem supplies food grade material meeting flavor industry standards, with assay, melting point and sensory notes confirmed on the COA, and small trial quantities are available for flavor development.

Food, Tobacco, Fragrance and Pharma Use

  • Food and beverage. The lead or boosting vanilla note in chocolate, confectionery, cookies and bakery, ice cream and dairy, soft drinks, sweet liqueurs and vanilla flavored formulations.
  • Tobacco and feed. Adds a sweet vanilla base to tobacco flavors and to feed palatants and molasses style animal flavorings.
  • Fragrance and personal care. Used in vanilla, oriental and gourmand accords for perfumes, soaps, candles, cosmetics and detergents.
  • Pharmaceutical and other. Masks bitter actives in syrups, granules, tablets and veterinary products, with minor use in electroplating and fine synthesis.

Typical Specifications

Food grade material is released to flavor industry standards on assay, melting point, loss on drying and sensory evaluation; values are reported on the COA, and the physical constants below identify the material.

Parameter Typical Value
Appearance White to pale yellow needle / scale crystals
Odor Sweet, creamy vanilla, stronger than vanillin
Melting Point 76 – 78 °C
Solubility Slightly soluble in water; soluble in alcohol, PG, glycerol
FEMA / JECFA 2464 / 893
Source Synthetic; food grade (FCC), COA per lot

Packaging, Documents and Ordering

  • Packed in food grade lined bags and 25 kg fiber drums or paper bags, with bulk FIBC loads for volume; containers stay sealed, light protected, below about 30 °C, dry and away from strong odors, since the crystals are light sensitive and pick up foreign smells.
  • Ethyl vanillin is safe within normal flavor dosing and is handled as a food ingredient with food grade packing to prevent contamination. Every lot carries a COA with assay, melting point, loss on drying and sensory results, together with SDS, and FCC or food compliance documents, allergen statements and flavor development samples can be discussed at inquiry.
  • For a quote, UATChem needs the grade (food or fragrance), quantity, packing and destination port, and samples can be matched to the target aroma or application.

FAQ

Q: What is ethyl vanillin used for?

A: It is a synthetic vanilla flavor for confectionery, bakery, beverages and dairy, plus tobacco, feed flavors and drug masking.

Q: What is the difference between ethyl vanillin and vanillin?

A: Ethyl vanillin is synthetic and three to four times stronger, with an ethoxy group; vanillin has methoxy and is natural.

Q: Is ethyl vanillin food grade and safe to use?

A: Yes, it is an approved synthetic flavor (FEMA 2464, JECFA 893) supplied to food grade FCC standards at normal dosing levels.
